Apple Iced Buns

Soft sweet bread iced all over with a surprise jammy apple filling. Scrumptious.

They take a little more time than a cupcake, but they are worth the wait!

YOU WILL NEED

FOR THE BUNS

125ml whole milk

125ml recently boiled water

500g strong bread flour

50g caster sugar

7g fast action yeast

1 tsp fine salt

50g soft butter

1 large egg flour for dusting

FOR THE APPLE FILLING

4 x apples

30g sugar

1/2 tsp ground cinnamon

splash of water

Piping bag or syringe with long donut nozzle (or any icing nozzle with small/ medium hole and a wooden spoon)

FOR THE ICING

250g icing sugar + very little cold water

FOR THE DECORATION

Cardboard (A3 size of there about)

Green paint

Brown paint

Scissors

Paintbrush

HOW TO

FOR THE BUNS

1. Mix the milk and just boiled water together in a jug.

2. Sieve flour into a large bowl. Add sugar, yeast and salt. Mix to combine.

3. Make a well in the flour and add the butter, milk and egg. mix to combine then bring together and knead on a floured surface for 6-8 minutes until smooth and elastic.

4. Leave to prove in a lightly oiled bowl in a warm spot in the house (or in a just turned on oven), for an hr and a half covered with a cloth. It should double in size.

5. Knock the dough back (basically give it a bash with your fist) and divide into 12 equal pieces (or 24 pieces for mini buns).

6. Roll each piece into a ball and space well apart on two lined baking sheets (so you achieve a nice round shape for the apple). Cover with clingfilm and leave again for another half an hour.

7. Preheat oven to 180’C. Bake the buns for 12-15 minutes until lightly golden. Cool on a wire rack.

FOR THE FILLING & ICING

1. Peel, core and chop your apples in to small chunks. Put into a pan, sprinkle with sugar and add cinnamon. Cook on a low heat with a splash of water until soft and broken down completely, free from lumpy bits. Leave to cool completely.

2. With the handle of your wooden spoon make a hole in the side of each bun. Fill the piping bag with the apple and insert into the prepared buns squeezing in a nice dollop of apple ‘jam’ into the middle of each. Around 1 desert spoon should do the trick.

3. In a bowl mix the icing sugar with a VERY little bit of water. Do this splash by splash until just wet. You want it to be as thick as possible. Ice the tops of the buns.

FOR THE DECORATION

1. Cut out some leafy stalk shapes from the cardboard.

2. Paint green and brown. Leave to dry.

3. Decorate your apple buns and enjoy, ideally with a nice cup of tea and teddys!
